Yum & Larb
(Thai spicy chili lime "salads")

These salads are what Thais call "Yum" or "Larb".  Yum & Larb are typically meat, vegetable or fruit (e.g. papaya) thoroughly tossed & mixed with the traditional dressing of fresh lime juice & chilies.  
A stone mortar & pestle is often used to literally pound in the intense tangy, hot & sour flavors!

An Esan favorite!  Pulled cured pork sausage,
smashed crunchy curried rice puffs, peanuts,
fresh chili-lime juice.
